The salads are extremely good and healthy in every season, but during summer time we can enjoy all the vegetables and fruits and we can combine them with seeds, grains, cheese or nuts! Let’s see what wonders we can prepare:Some of recipes that we have not thought before can be your friends if you want to get rid of extra pounds or just maintain your lifestyle balanced! I tried the strangest combinations, my favorite from the list is Buffalo chicken salad with Chinoa !
I have prepared for you 10 special salads:
1. Avocado , watercress and pineapple salad2 bunches watercress
One 2 1/2 pound pineapple, peeled, cored, and cut into four 1-inch-thick slices
1 tablespoon sugar
3 garlic cloves, finely chopped
1/4 cup extra-virgin olive oil
2 tablespoons cider vinegar or fresh lime juice
1/8 teaspoon ground cumin
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 large Florida (West Indian) avocado or 2 Haas avocados
1 small red onion (5 ounces), thinly slivered lengthwise

2. Beet “Carpaccio” With Avocado & Chia Dressing1 large beet, thoroughly washed
1 avocado, slightly firm
3 tbsp chopped pecans or walnuts
1 tbsp extra virgin olive oil
1 tsp grain mustar
1 tsp Dijon mustard
2 tsp apple cider vinegar
2 tsp freshly squeezed lemon juice
½ tsp agave nectar
⅛ tsp salt, or to taste
2 tsp chia seeds
2 tbsp chopped chives

3. Tomato Salad with Mozzarella and avocado1 large tomato
1 fresh buffalo mozzarella (in water), drained or other mozzarella
1 avocado, peeled and sliced
minced fresh basil
1/2 cup arugula salad
1 tsp lemon juice
1 Tbsp. olive oil
salt and freshly ground pepper

4.Citrus salad with pink pepper4-5 different pieces of citrus fruits (e.g. , grapefruit , orange )
1 small red onion
1 sprig of mint
1 tablespoon pink pepper
lemon peel
Dressing:
3-4 tablespoons citrus juice hunt
1 tablespoon olive oil
honey
2 tsp salt
5. Radish salad , pears and goat cheesea roll of 150g fresh goat cheese
a small bunch fresh chives
50g cashew nuts
a small bunch of radishes
1 pear
half a head of lettuce
50 gr pear syrup
2 tsp of vinegar
1 tsp mustard seeds

6. Sprinf sprouts salad1.5 cups sprouted mugbeans
6 fresh radishes, sliced
1 cup freshly grated coconut flesh
2 oranges, sliced
Dressing
1/2 tsp salt
1/4 tsp black pepper
1 tbsp honey
2 tbsp lemon juice
1/4 cup walnut oil

7. Buffalo chicken quinoa salad 1 cup quinoa
1 lb boneless skinless chicken breast, cut into bite size pieces
2 cups broccoli florets
3/4 cup shredded carrots
3/4 cup shredded cabbage
1/2 cup blue cheese crumbles
4 green onions, chopped
Dressing:
1/3 cup olive oil
1/2 cup Frank’s hot sauce
1/2 tsp seasoned salt

8. Fennel, Blood Orange & Hazelnut Salad1 large fennel bulb, thoroughly washed
2 blood oranges, sliced
½ cup whole raw hazelnuts
1tsp vegetable oil
1 tbsp extra virgin olive oil
1-2 tbsp fresh squeezed lemon juice
½ tsp salt
2 hard boiled eggs (optional)

9. Crunchy Cashew Thai Quinoa Salad with Ginger Peanut Dressing¾ cup uncooked quinoa
1-2 cups shredded red cabbage, depending on how much crunch you like
1 red bell pepper, diced
½ red onion, diced
1 cup shredded carrots
½ cup chopped cilantro
¼ cup diced green onions
½ cup cashew halves or peanuts (honey-roasted is good)
Optional: 1 cup edamame or chickpeas
Fresh lime, for a bit of tang
For the dressing:
¼ cup all natural peanut butter
2 teaspoons freshly grated ginger
3 tablespoon soy sauce, gluten-free if desired
1 tablespoon honey (use agave if vegan)
1 tablespoon red wine vinegar
1 teaspoon sesame oil
1 teaspoon olive oil

10. Shaved Broccoli Salad3 – 4 small broccoli heads, stems cut to about 2″ and julienned
1 small red apple, cut into slices about the same size as the broccoli
1/2 cup dried cranberries
1/2 small red onion, sliced
1/2 cup sliced almonds
Dressing
1/4 cup mayonnaise or vegenaise
1/4 cup non-fat plain Greek yogurt
2 tablespoons apple cider vinegar (I use Bragg’s)
2 teaspoons honey or maple syrup
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
